Caramelize the onions
- Melt the butter with the olive oil in a large Dutch oven over medium heat. Add the sliced yellow onions and cook for 20–25 minutes, stirring often, until deeply golden and caramelized.
Brown the beef
- Add the ground beef and cook for 5–6 minutes, breaking it apart until no pink remains. Stir in the garlic and cook for 30 seconds until fragrant.
Season the mixture
- Mix in the Worcestershire sauce, thyme, salt, and black pepper. Stir well to coat the beef and onions.
Simmer the broth
- Pour in the beef broth and beef consommé. Bring to a gentle boil.
Cook the pasta
- Add the uncooked pasta. Reduce to a steady simmer and cook for 10–12 minutes, stirring occasionally, until the pasta is tender and most of the liquid has been absorbed.
Make it creamy
- Reduce the heat to low. Stir in the heavy cream, Gruyère cheese, mozzarella cheese, and Parmesan cheese until melted into a smooth, creamy sauce.
Rest and finish
- Remove from the heat and let the pasta rest for 2–3 minutes to thicken slightly. Sprinkle with fresh parsley and serve hot with extra Gruyère or Parmesan if desired.
Notes
For the best caramelization, stir often and keep the onions moving so they turn deep golden rather than burn. Store leftovers in an airtight container in the refrigerator for up to 3 days; reheat gently with a splash of broth or water since the pasta will thicken as it cools. Freezing is not recommended due to the dairy-based cheese sauce changing texture. If you want a lighter option, swap the heavy cream for evaporated milk and use reduced-fat cheeses.
