Season and sear the salmon
- Pat the salmon fillets dry with paper towels, then season both sides with kosher salt, black pepper, garlic powder, and smoked paprika.
- Heat olive oil in a large skillet over medium-high heat until shimmering.
- Sear the salmon for 4–5 minutes per side until golden and nearly cooked through, then transfer to a plate.
Make the Parmesan cream sauce
- Reduce the heat to medium and melt unsalted butter in the same skillet.
- Add the minced garlic and cook for 30 seconds until fragrant.
- Stir in the chopped sun-dried tomatoes and cook for 1 minute.
- Pour in the chicken broth and scrape up any browned bits from the pan.
- Add the heavy cream, Italian seasoning, and crushed red pepper flakes, then simmer for 3–4 minutes.
- Stir in the Parmesan cheese until the sauce is smooth and creamy.
- Add the baby spinach and cook until just wilted.
Finish and serve
- Return the salmon to the skillet, spoon the creamy sauce over each fillet, and simmer for 3–4 minutes until the salmon reaches 145°F (63°C).
- Sprinkle with fresh basil and fresh parsley, along with extra Parmesan, then serve with lemon wedges.
Notes
Pro tip: use freshly grated Parmesan and keep the sauce at a gentle simmer so it stays silky instead of grainy. Refrigerate leftovers in an airtight container for up to 3 days; rewarm gently in a skillet over low heat until just heated through. Freezing isn’t recommended due to texture changes in the cream sauce. Dietary swap: substitute half-and-half for heavy cream for a lighter sauce (simmer a few minutes longer for body).
