Ingredients

  • 1.5 lb carrots peeled and cut into 1/4-inch diagonal slices
  • 6 cup water
  • 0.5 tsp kosher salt divided
  • 3 tbsp unsalted butter
  • 2 tbsp honey
  • 0.125 tsp ground black pepper

Equipment

  • 1 3-quart saucepan
  • 1 12-inch skillet

Method

  1. Combine the carrots, water, and 1/4 teaspoon of the salt in a 3-quart saucepan.
  2. Bring the mixture to a boil over high heat.
  3. Reduce the heat to medium and simmer uncovered for 7 to 10 minutes, until the carrots are just tender when pierced with a fork.
  4. Drain the carrots well.
  5. Melt the butter in a 12-inch skillet over medium heat.
  6. Stir in the honey, remaining 1/4 teaspoon salt, and ground black pepper.
  7. Add the carrots and toss for 2 to 3 minutes, until glossy and lightly coated with the glaze.

Notes

For the best texture, simmer just until the carrots are tender when pierced with a fork. Refrigerate leftovers in an airtight container for 3 to 4 days; freezing is not recommended because the carrots can soften. For a dairy-free option, use dairy-free butter.
