Ingredients
  

Chicken and vegetables
  • 1.5 lb boneless, skinless chicken thighs
  • 2 cup fresh pineapple chunks
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 1 red onion
  • 2 tbsp olive oil
Sweet-and-savory sauce
  • 0.33 cup soy sauce
  • 0.25 cup pineapple juice
  • 2 tbsp brown sugar
  • 2 clove garlic
  • 1 tsp fresh ginger
  • 1 tbsp cornstarch
  • 2 tbsp water
Garnish
  • 2 green onions
  • 1 tbsp sesame seeds

Method
 

Preheat and make the sauce
  1. Preheat oven to 425°F and line a large sheet pan with parchment paper.
  2. In a bowl, whisk together the soy sauce, pineapple juice, brown sugar, garlic, and ginger.
  3. Toss the chicken chunks with the olive oil and half of the sauce mixture; set the remaining sauce aside.
Roast the sheet pan dinner
  1. Spread the chicken, pineapple, bell peppers, and red onion in a single layer across the sheet pan.
  2. Roast 20–25 minutes, until the chicken is cooked through and the pineapple edges are caramelized.
Glaze and finish
  1. Meanwhile, whisk the cornstarch and water into the reserved sauce, then simmer in a small saucepan over medium heat 3–4 minutes until thickened into a glaze.
  2. Drizzle the warm glaze over the sheet pan and toss gently to coat.
  3. Garnish with green onions and sesame seeds, then serve hot over rice.

Notes

For best jammy pineapple, keep everything in a single layer so the cut fruit gets direct heat and browns at the edges. Refrigerate leftovers in an airtight container up to 3 days; freeze glazed chicken and veggies up to 2 months (reheat until hot and saucy). For a lighter option, use low-sodium soy sauce and reduce brown sugar by 1 tbsp without changing the method.
