Apple Fritters with Vanilla Glaze

Apple fritters are made with diced apples folded into cinnamon-spiced batter, fried until deeply golden, and dipped in a smooth vanilla glaze. Cool them briefly before glazing for warm, tender centers and a set, sweet coating.

Ingredients

For the fritters
  • 2 cups all-purpose flour
  • 0.33 cup granulated sugar
  • 2 tsp baking powder
  • 1 tsp ground cinnamon
  • 0.25 tsp ground nutmeg
  • 0.5 tsp kosher salt
  • 2 eggs large
  • 0.67 cup whole milk
  • 1 tsp vanilla extract
  • 2 apples medium, peeled, cored, and cut into 1/4-inch dice
  • 8 cups vegetable oil for frying
For the vanilla glaze
  • 1.5 cups confectioners’ sugar
  • 3 tbsp whole milk
  • 1 tsp vanilla extract

Equipment

  • 1 5-quart Dutch oven
  • 1 baking sheet

Method

Make the fritters
  1. Whisk the flour, granulated sugar, baking powder, cinnamon, nutmeg, and salt in a large bowl.
  2. In a medium bowl, whisk the eggs, milk, and vanilla, then stir into the dry ingredients just until combined; fold in the apples.
Fry the fritters
  1. Pour the oil into a 5-quart Dutch oven, making sure it reaches about 2 inches deep and does not fill the pot more than halfway; heat over medium to 350°F.
  2. Drop the batter by 1/4-cup portions into the oil, gently flattening each into a 3-inch round and frying in batches without crowding the pot; fry for 2 to 3 minutes per side, adjusting the heat to keep the oil near 350°F, until deeply golden and cooked through with no wet batter in the centers.
  3. Transfer the fritters to a wire rack set over a baking sheet and let them cool for 5 minutes.
Make the vanilla glaze
  1. Whisk the confectioners’ sugar, milk, and vanilla in a medium bowl until smooth, then dip the warm fritters in the glaze and return them to the rack until the glaze sets.

Notes

Keep the oil near 350°F so the fritters cook through without becoming greasy. Store leftovers airtight in the refrigerator for up to 2 days; freezer: yes. For a dairy-free swap, use unsweetened oat milk in both the batter and glaze.
