Preheat and prep zucchini
- Preheat the oven to 400°F and line a baking sheet for easy roasting.
- Scoop out the center of each zucchini half to create a boat shape, leaving a sturdy border, then place cut-side up on the baking sheet.
- Lightly salt the insides of the zucchini boats to help them soften while staying firm.
Pre-bake the boats
- Bake the empty zucchini boats for 10 minutes at 400°F until slightly softened before filling.
Cook the taco filling
- Heat the olive oil in a skillet over medium heat, then add the diced onion and cook for 3 minutes until soft.
- Add the minced garlic and cook for 1 minute more until fragrant.
- Add the ground beef, breaking it up as it cooks, and cook until browned, about 6–7 minutes.
Season and thicken
- Stir in the taco seasoning, diced tomato, tomato sauce, salt, and black pepper, then simmer for 3–4 minutes until thickened and well combined.
Fill, top, and bake
- Spoon the taco filling evenly into the zucchini boats, mounding slightly, then top generously with shredded cheddar cheese.
- Bake for 12–15 minutes at 400°F until the cheese is melted and bubbly and the zucchini is fork-tender but still holding its shape.
Garnish and serve
- Top each boat with dollops of sour cream, diced avocado, chopped fresh cilantro, and pickled jalapeños if using.
- Serve warm while the cheese stays hot and gooey.
Notes
For best boat shape, don’t remove too much zucchini—leave a sturdy border so the cups can hold filling. Store leftovers in an airtight container in the fridge for up to 3 days; reheat in a 375°F oven until warmed through. Freezing isn’t recommended because zucchini texture softens after thawing. If you want a lighter option, use ground turkey in place of ground beef for a lower-fat filling.
