Combine the salad
- Add seedless watermelon cubes, sliced large English cucumber, diced ripe avocados, and thinly sliced red onion to a large serving bowl.
- Sprinkle chopped fresh mint leaves over the salad.
Make and add the lime dressing

- Drizzle the lime dressing over the salad and gently toss until evenly coated.
Finish and serve
- Top with crumbled feta cheese if desired.

Notes
For the best texture, serve soon after assembling—avocado will soften as it sits. Store covered in the refrigerator for up to 1 day, but expect the watermelon to release some juice. Freezing is not recommended. For a dairy-free option, skip the feta cheese or use a dairy-free feta-style crumble.
