- Wash and dry the romaine lettuce thoroughly.
- Chop the romaine and place it in a large serving bowl.
- Add the shredded rotisserie chicken to the bowl.
- Sprinkle in the croutons and grated Parmesan cheese.
- Season the salad with black pepper.
Make the Caesar dressing
- In a small bowl, whisk together mayonnaise, lemon juice, Dijon mustard, Worcestershire sauce, garlic, grated Parmesan cheese, and water.
- Season the dressing with salt and pepper to taste.
Assemble and serve
- Drizzle the Caesar dressing over the salad.
- Toss until the salad is evenly coated.
- Garnish with extra Parmesan cheese and lemon wedges.
- Serve immediately.
Notes
For the best texture, keep dressing separate until just before serving so the croutons stay crisp. Store assembled leftovers in the refrigerator up to 2 days, but note the romaine softens after dressing. Freezing is not recommended. For a lighter swap, use light mayonnaise for the dressing while keeping the same Parmesan and lemon balance.
