Salad
  • 1 romaine lettuce
  • 3 cup rotisserie chicken shredded
  • 1 cup croutons
  • 0.5 cup grated Parmesan cheese
  • 0.25 tsp black pepper
Caesar Dressing
  • 0.5 cup mayonnaise
  • 2 tbsp lemon juice
  • 1 tbsp Dijon mustard
  • 1 tsp Worcestershire sauce
  • 2 garlic minced
  • 0.25 cup grated Parmesan cheese
  • 2 tbsp water
  • 0.25 tsp salt and pepper to taste
Garnish
  • 0.25 cup Extra Parmesan cheese
  • 1 lemon wedges

Method
 

Prepare the salad
  1. Wash and dry the romaine lettuce thoroughly.
  2. Chop the romaine and place it in a large serving bowl.
  3. Add the shredded rotisserie chicken to the bowl.
  4. Sprinkle in the croutons and grated Parmesan cheese.
  5. Season the salad with black pepper.
Make the Caesar dressing
  1. In a small bowl, whisk together mayonnaise, lemon juice, Dijon mustard, Worcestershire sauce, garlic, grated Parmesan cheese, and water.
  2. Season the dressing with salt and pepper to taste.
Assemble and serve
  1. Drizzle the Caesar dressing over the salad.
  2. Toss until the salad is evenly coated.
  3. Garnish with extra Parmesan cheese and lemon wedges.
  4. Serve immediately.

Notes

For the best texture, keep dressing separate until just before serving so the croutons stay crisp. Store assembled leftovers in the refrigerator up to 2 days, but note the romaine softens after dressing. Freezing is not recommended. For a lighter swap, use light mayonnaise for the dressing while keeping the same Parmesan and lemon balance.
