Ingredients

For the Crust
  • 2 cup graham cracker crumbs
  • 0.33 cup granulated sugar
  • 0.5 cup unsalted butter melted
For the Raspberry Swirl
  • 1.5 cup fresh raspberries
  • 2 tbsp granulated sugar
  • 1 tbsp lemon juice
  • 1 tsp cornstarch mixed with water
For the White Chocolate Cheesecake Filling
  • 16 oz cream cheese softened
  • 1 cup powdered sugar
  • 8 oz white chocolate melted and cooled slightly
  • 1 tsp vanilla extract
  • 1 cup heavy whipping cream cold
Garnish
  • 0.25 fresh raspberries
  • 1 white chocolate curls
  • 1 white chocolate drizzle
  • 0.25 fresh mint leaves optional

Equipment

  • 1 sheet pan
  • 1 stand mixer
  • 1 cast iron skillet

Method

Prep the crust
  1. Line an 8×8-inch baking pan with parchment paper. This prevents sticking and makes lifting the bars easy later.
  2. Combine graham cracker crumbs, granulated sugar, and melted unsalted butter until evenly moistened. Press firmly into the bottom of the pan to form a tight, even layer.
  3. Refrigerate the crust for 20 minutes. The surface should feel firm before adding the filling.
Make the raspberry swirl
  1. In a small saucepan, combine fresh raspberries, granulated sugar, and lemon juice over medium heat. Cook for 4–5 minutes until the berries break down.
  2. Stir in the cornstarch slurry and cook for another 1 minute until thickened. You should see the sauce turn glossy and slightly cling to the spoon.
  3. Strain the raspberry sauce through a fine-mesh sieve, then cool completely. This removes seeds so the swirl stays smooth in each bite.
Assemble the cheesecake filling
  1. Beat cream cheese and powdered sugar until smooth and fluffy. Scrape the bowl as needed so there are no lumps.
  2. Mix in melted white chocolate and vanilla extract until fully incorporated. The mixture should look silky and evenly colored.
  3. Whip cold heavy whipping cream to stiff peaks in a separate bowl. The peaks should hold their shape when you lift the whisk.
  4. Gently fold the whipped cream into the cheesecake mixture. Mix just until combined so the filling stays light and airy.
  5. Spread the filling evenly over the chilled crust. Use an offset spatula or spoon to smooth the top.
  6. Spoon small dollops of the cooled raspberry sauce over the filling and gently swirl with a knife to create a marbled effect. Keep swirls subtle for a ribbon-like look.
Chill, slice, and garnish
  1. Refrigerate for at least 6 hours, preferably overnight, until fully set. The center should be firm enough to slice cleanly.
  2. Lift the bars from the pan, slice into bars, and garnish with fresh raspberries, white chocolate curls, and a white chocolate drizzle before serving. Add optional mint leaves for a fresh finish.

Notes

Pro tip: cool the raspberry sauce completely before swirling so it doesn’t melt the cheesecake layer. Store covered in the refrigerator for up to 4 days; freeze bars for up to 2 months (thaw overnight in the fridge) for best texture. For a dairy-light option, use a 1:1 cream cheese alternative and dairy-free white chocolate, keeping the whipping cream as a heavy-cream style for proper structure.
