Ingredients

  • 1 lb fresh green beans trimmed
  • 1 tsp kosher salt divided
  • 3 tbsp unsalted butter
  • 0.33 cup sliced almonds
  • 1 tbsp fresh lemon juice
  • 0.25 tsp black pepper freshly ground

Equipment

  • 1 12-inch skillet

Method

  1. Bring a large pot of water to a boil.
  2. Stir in 1/2 teaspoon of the salt.
  3. Add the green beans and boil for 4 to 5 minutes, until bright green and crisp-tender.
  4. Drain the green beans.
  5. Melt the butter in a 12-inch skillet over medium heat.
  6. Add the almonds and cook for 2 to 3 minutes, stirring often, until golden.
  7. Add the green beans, lemon juice, remaining 1/2 teaspoon salt, and black pepper.
  8. Toss for 2 to 3 minutes, until the beans are hot and coated.

Notes

For the brightest beans, drain promptly once they are bright green and crisp-tender. Refrigerate leftovers in an airtight container for up to 4 days; freezing is not recommended because the beans may lose their texture. For a dairy-free version, use plant-based butter.
