Blend the smoothie base
- Add frozen peach slices, frozen banana, vanilla Greek yogurt, milk, honey, vanilla extract, and ground cinnamon to a high-powered blender. Blend on high for 60–90 seconds, pausing to scrape down the sides, until thick and completely smooth with no ice chunks.
- Check the consistency: it should be thick enough to hold a spoon upright. If it's too thick to blend, add milk 1 tbsp at a time; if too thin, add a few more frozen peach slices and re-blend.
Assemble and top
- Pour the smoothie into a chilled bowl and smooth the top with the back of a spoon. Keep it cold so it stays thick and spoonable.
- Arrange granola, fresh peach slices, sliced almonds, and chia seeds in neat rows or clusters across the surface. Press them lightly so they adhere to the smooth base.
- Drizzle with extra honey, garnish with fresh mint leaves, and serve immediately while cold. Serve as soon as it's assembled for the best texture.
Notes
For the smoothest bowl, use a high-powered blender and keep the fruit very cold before blending. Store leftovers in an airtight container in the refrigerator up to 1 day; stir vigorously before eating, since toppings will soften. Freezing is not recommended because the texture can separate after thawing. For a lighter option, use nonfat Greek yogurt or unsweetened oat milk.
