Ingredients

For the bacon
  • 6 oz bacon thick-cut, cut into 1/2-inch pieces
For the Brussels sprouts
  • 1.5 lb Brussels sprouts trimmed and halved lengthwise
  • 2 tbsp olive oil
  • 0.5 tsp kosher salt
  • 0.25 tsp black pepper

Equipment

  • 1 12-inch skillet
  • 1 18x13-inch rimmed baking sheet

Method

Prepare the oven
  1. Preheat the oven to 425°F.
Cook the bacon
  1. Cook the bacon in a 12-inch skillet over medium heat, stirring occasionally, for 8–10 minutes, until crisp.
  2. Transfer the bacon to a paper-towel-lined plate with a slotted spoon.
Roast the Brussels sprouts
  1. Toss the Brussels sprouts in a 4-quart bowl with the olive oil, kosher salt, and black pepper until evenly coated.
  2. Spread the sprouts cut-side down in a single layer on an 18x13-inch rimmed baking sheet and roast for 20–25 minutes, until browned and tender.
Finish the dish
  1. Scatter the crisp bacon over the roasted sprouts and serve.

Notes

For the best browning, arrange the sprouts cut-side down without crowding the baking sheet. Refrigerate leftovers in an airtight container for up to 3 days; freezing is not recommended because the sprouts can soften. For a vegetarian variation, use plant-based bacon.
