Ingredients

For the filling
  • 8 oz cream cheese softened
  • 1 cup feta cheese crumbled
  • 0.5 cup dried cranberries finely chopped
  • 2 green onions thinly sliced
  • 0.25 tsp black pepper
For the pinwheels
  • 1 package (17.3 oz) frozen puff pastry 2 sheets, thawed
For the egg wash
  • 1 egg large
  • 1 tbsp water

Equipment

  • 2 baking sheets

Method

Make the filling
  1. In a medium bowl, stir the cream cheese until smooth, then mix in the feta, cranberries, green onions, and black pepper.
Assemble and chill
  1. Heat the oven to 400°F.
  2. Line two baking sheets with parchment paper.
  3. Unfold one pastry sheet on a clean work surface, keeping the other sheet chilled.
  4. Spread half of the filling over the pastry, leaving a 1/2-inch border along one long edge, then roll it tightly toward that edge; place the log seam-side down and repeat with the remaining pastry and filling.
  5. Refrigerate the logs for 20 to 30 minutes, until firm enough to slice cleanly.
Prepare the egg wash
  1. In a small bowl, whisk the egg and water until combined.
Slice and bake
  1. Slice the logs into 1/2-inch rounds and arrange them about 1 inch apart on the prepared baking sheets, then brush the exposed pastry lightly with egg wash.
  2. Bake for 15 to 18 minutes, switching the baking sheets’ rack positions halfway through, until the pinwheels are puffed and deep golden brown.
  3. Let the pinwheels rest on the baking sheets for 5 minutes before serving.

Notes

For clean slices, chill the logs until firm. Store in an airtight container in the refrigerator for up to 3 days; baked pinwheels can be frozen for up to 2 months. For a gluten-free option, use gluten-free puff pastry.
