Prep the loaf pan and dry mix
- Preheat the oven to 350°F. Grease and line a 9×5-inch loaf pan with parchment paper.
- Whisk together the all-purpose flour, baking soda, baking powder, salt, ground cinnamon, ground nutmeg, and ground ginger in a medium bowl.
Make the banana-carrot batter
- Beat the unsalted butter, light brown sugar, and granulated sugar until smooth.
- Add the eggs one at a time, mixing after each addition.
- Mix in the vanilla extract, mashed ripe bananas, sour cream, and finely grated carrots until evenly combined.

Bake and cool
- Pour the batter into the prepared loaf pan and smooth the top.

- If the top is browning too fast, loosely cover with foil during the final 15 minutes of baking at 350°F.
- Cool the loaf in the pan for 15 minutes, then transfer it to a wire rack and let it cool completely.
Make frosting and finish
- Beat the cream cheese and unsalted butter until smooth and fluffy.
- Gradually mix in the powdered sugar, vanilla extract, and salt until creamy and spreadable.
- Spread the frosting generously over the cooled loaf.
- Sprinkle with chopped walnuts and a light dusting of ground cinnamon before slicing and serving.
Notes
For the most tender crumb, fold the dry ingredients in only until you no longer see flour streaks; over-mixing can make the loaf tough. Store covered in the refrigerator up to 4 days—bring to room temperature for the best texture. Freezing is yes: freeze unfrosted (or frosting separately) for up to 2 months.
