  • 1 tbsp maple syrup

  • 0.125 tsp ground nutmeg
  • 0.5 tsp vanilla extract
  • 0.0625 tsp salt pinch

Method
 

Mix and flavor
  1. Combine the rolled oats, milk, Greek yogurt, maple syrup, chia seeds, ground cinnamon, nutmeg, vanilla extract, and salt in a large bowl or airtight container. Stir until fully mixed with no dry oats remaining (texture should look thick and creamy).
  2. Fold in the finely diced Honeycrisp apple until evenly distributed throughout the mixture. Let the mixture sit for 1 minute to start absorbing before portioning.
Jar and chill
  1. Divide the mixture between two mason jars or airtight containers. Leave about 1 inch of space at the top for expansion.
  2. Cover tightly and refrigerate for at least 6 hours or overnight until the oats are soft and creamy. For best texture, aim for 8 to 12 hours.
Serve and finish
  1. Stir the overnight oats before serving to loosen the texture. If you want a thinner consistency, stir in a splash of milk until it reaches your preferred thickness.
  2. Top each jar with chopped pecans or walnuts, thin apple slices, an extra sprinkle of cinnamon, and a light drizzle of maple syrup. Serve cold, or warm gently in the microwave if desired.

Notes

Pro tip: dice the apple very small so it softens evenly during the overnight soak. Store covered in the refrigerator for up to 4 days; the oats will thicken over time, so loosen with a splash of milk when serving. Freezing isn’t recommended for the best apple texture. Dietary swap: use unsweetened almond milk and choose a dairy-free Greek yogurt substitute if you want a dairy-free version.
