Method
Make the cornbread
- Heat the oven to 400°F.
- Grease an 8-inch square baking pan with 1 teaspoon of the vegetable oil.
- Whisk the cornmeal, flour, baking powder, and salt in a large bowl.
- Whisk the buttermilk, egg, and remaining 4 tablespoons oil in a separate bowl.
- Stir the buttermilk mixture into the dry ingredients just until combined.
- Spread the batter in the pan.
- Bake for 20–25 minutes, until golden and a toothpick inserted in the center comes out clean.
- Cool the cornbread completely, about 45 minutes.
- Crumble the cornbread into pieces about 1 inch across.
Dry the bread and cornbread
- Heat the oven to 250°F.
- Spread the cornbread crumbles and bread cubes in an even layer on an 18x13-inch rimmed baking sheet.
- Bake for 45–55 minutes, stirring gently halfway through, until the pieces are dry to the touch.
Assemble and bake the dressing
- Heat the oven to 350°F.
- Grease a 9x13-inch baking dish with 1 tablespoon of the softened butter.
- Melt the remaining 4 tablespoons butter in a 12-inch skillet over medium heat.
- Add the onion and celery and cook, stirring occasionally, for 8–10 minutes, until softened.
- Combine the dried cornbread and bread, sage, poultry seasoning, and black pepper in a large bowl.
- Stir in the cooked onion and celery.
- Whisk the chicken broth and eggs together.
- Pour the broth and egg mixture over the bread mixture.
- Stir until evenly moistened.
- Transfer the mixture to the prepared baking dish.
- Bake uncovered for 45–55 minutes, until golden on top and the center reaches 160°F.
- Rest for 10 minutes before serving.
Notes
For the best texture, dry the cornbread and bread until the pieces are dry to the touch. Refrigerate leftovers for 3–4 days; freezing is suitable. For a vegetarian swap, use vegetable broth in place of chicken broth.
