Method
- Pat the pork shoulder dry.
- Season the pork with the kosher salt and black pepper.
- Heat the vegetable oil in a 12-inch skillet over medium-high heat.
- Brown the pork in batches, turning to brown several sides, about 8 minutes per batch.
- Blend the tomatillos, chopped roasted Hatch green chiles, yellow onion, garlic, jalapeño, ground cumin, dried oregano, and low-sodium chicken broth until mostly smooth.
- Transfer the browned pork to a 6-quart slow cooker.
- Pour the blended chile mixture over the pork.
- Cover and cook on LOW for 7 to 8 hours or HIGH for 4 to 5 hours, until the pork is fork-tender and easily shreds.
- Shred the pork in the slow cooker.
- Stir in the fresh lime juice and chopped fresh cilantro.
Notes
For the best browning, avoid crowding the pork in the skillet and brown it in batches. Refrigerate leftovers for 3 to 4 days or freeze them; use certified gluten-free chicken broth if needed.
